Vinificazione

L’uva Saperavi viene raccolta a mano al momento ottimale della maturazione a metà settembre. Diraspate e pigiate in modo soffice, vengono raffreddate a 4°C e macerate sulle bucce per 8-10 ore. Poi il succo viene sgocciolato e sedimentato. La fermentazione avviene a temperatura controllata (15-18°C) in serbatoi di acciaio inox, utilizzando ceppi di lievito selezionati. Al termine della fermentazione, il vino viene travasato pulito in un altro serbatoio per un ulteriore affinamento e affinamento. I primi lotti vengono imbottigliati tra febbraio e aprile.

Colore:                                Color rosa chiaro.

Aromi:                                  Aromi di melograno e crespino sono abbinati a pesca e lampone.

Palato:                                 Il gusto è croccante ed elegante, con il mazzo di sapori che ripete il naso. Il palato medio è setoso e rotondo e termina con un vivace petalo di rosa e un retrogusto ben equilibrato.
