Vinificazione

L’uva viene raccolta a mano all’optimum della sua maturazione a fine ottobre, inizio novembre. L’uva diraspata in modo soffice viene raffreddata a 4-6°C e poi pressata delicatamente nella pressa pneumatica. Più tardi, il mosto sedimentato e limpido inizia a fermentare lentamente a temperatura controllata con precisione (15°C) in serbatoi di acciaio inox. Quando il succo in fermentazione raggiunge l’equilibrio ottimale tra zuccheri e acidità, la fermentazione viene interrotta per raffreddamento, in modo da mantenere la naturale dolcezza e freschezza del vino. Successivamente il vino viene mantenuto freddo a circa 0°C prima dell’imbottigliamento.

Colore:                                Colore dorato chiaro con riflesso verdastro

Aromi:                                  Mela cotogna, ananas e menta, con sottili sentori di caprifoglio e albicocca

Palato:                                 Splendidamente fresco e sapido, con note di mela cotogna e pera. Il retrogusto fresco e pulito riporta aromi fruttati e floreali
