Vinificazione

Le uve vengono raccolte a mano al momento ottimale della loro maturazione. La diraspatura e pigiatura soffice è seguita da una fermentazione a temperatura controllata (23-28 °C) in serbatoi di acciaio inossidabile con ceppi di lievito selezionati. L’estrazione del colore e del corpo è gestita mediante diraspatura e rimontaggio. Dopo 8-10 giorni di macerazione, il vino viene travasato pulito, trasferito per la fermentazione malolattica e affinato in serbatoi di acciaio inox. Una piccola parte del vino viene affinato in botti di rovere francese per 3-4 mesi, per aggiungere al vino ulteriori dimensioni e complessità derivate dal rovere pregiato.

Note di degustazione

• Colore:                                 Rosso scuro e profondo
• Aromi:                                  Aromi di amarena matura e ribes nero sono dominanti
• Palato:                                 Mostra sapori di mora carnosa, succosa e succosa e di ciliegia corniola troppo matura con alcune note di prugna secca. Il retrogusto è succoso e rotondo, con tannino fermo e maturo alla fine.
