Vinificazione

Il blocco BIO dei vigneti di Kudigora è gestito nel pieno rispetto dei principi e dei concetti della viticoltura biologica. Le uve completamente mature vengono raccolte a mano alla fine di settembre. Alla diraspatura e pigiatura soffice segue la fermentazione a temperatura controllata (23-28°C) su lieviti indigeni presenti sulle bucce dell’uva. L’estrazione del colore e del corpo è gestita mediante diraspatura e rimontaggio. Dopo 8 giorni di macerazione, il vino viene travasato pulito e trasferito per la fermentazione malolattica. Il vino viene affinato per circa 12 mesi prima dell’imbottigliamento.

Colore:                                Colore rosso estremamente scuro, da transitorio a nero

Aromi:                                  Il vino si apre con vividi aromi di frutta rossa – ciliegia, ribes rosso e fragola

Palato:                                 Gusti simili sono dominanti in bocca, sostenuti da una struttura solida e ricca di tannini. Il retrogusto è fresco e potente, con un finale ricco e fruttato
