Vinificazione

Le uve completamente congelate nei blocchi meridionali di Rkatsiteli dei vigneti di Kondoli e nei vecchi vigneti selezionati di Rkatsiteli nei villaggi di Ikalto e Gulgula a Kakheti sono state raccolte all’inizio di dicembre, quando la temperatura esterna è scesa a -9°C. A queste temperature la porzione d’acqua di ogni uva si separa dagli zuccheri, dal sapore e dai componenti acidi. L’acqua si congela e cristallizza lasciando gli altri composti come gocce di liquido in sospensione tra i cristalli d’acqua. L’uva è stata raccolta a mano al mattino presto in piccole cassette, smistata a mano nella nostra cantina, tutte le uve danneggiate sono state rimosse e la frutta rimasta è stata pressata delicatamente nella pressa a cesto. La fermentazione è stata tenuta per 2 mesi in serbatoi di acciaio inox a temperatura controllata di 16-18°C. Successivamente il vino è stato mantenuto freddo a circa 0°C per 6 mesi. Una leggera filtrazione è stata completata dall’imbottigliamento e da un affinamento in bottiglia di 6 mesi nella nostra cantina prima della commercializzazione.

Colore:                                Oro chiaro con riflessi argentati scintillanti

Aromi:                                  Il naso è rossore di ananas maturo, pere e nettarine e scorza d’arancia.

Palato:                                 I sapori di frutta esaltano la naturale dolcezza del vino per dare equilibrio e intensità. Un formicolio di ananas fresco e stuzzicante rimane in bocca a lungo dopo che il vino se n’è andato
