Vinificazione

Le uve vengono raccolte a mano al momento ottimale della loro maturazione. Dopo la diraspatura e la pigiatura soffice, due varietà vengono fatte fermentare separatamente a temperatura controllata (23-28°C) in serbatoi di acciaio inossidabile utilizzando ceppi di lievito selezionati. L’estrazione del colore e del corpo è gestita mediante diraspatura e rimontaggio. Dopo 8-10 giorni di macerazione, il vino viene travasato pulito, trasferito per la fermentazione malolattica. L’affinamento avviene per il 90% in serbatoi di acciaio inox e per il 10% in botti di rovere francese per 4 mesi. L’assemblaggio finale avviene dopo 5 mesi. La minima filtrazione e l’imbottigliamento competono con il processo.

Note di degustazione

Colore:                                Colore rosso intenso.

Aromi:                                 Mora, ribes nero e ciliegia matura con alcune note di erbe.

Sapore:                                Maturo, corposo e concentrato, offre una bella bacca nera unita a un tocco di amarena e sapori di prugna secca. Il finale è lungo e complesso sostenuto da tannini sodi con alcune note di rovere.
