Vinificazione

Il blocco selezionato, Saperavi K.2001, dei vigneti di Kondoli sono stati raccolti verdi durante i primi giorni di agosto per ridurre artificialmente la resa di uva fino a 7 tonnellate per ettaro e quindi aumentare la qualità complessiva e la concentrazione di frutta rimanente. Alla fine di settembre le uve sono state raccolte a mano in piccole cassette, selezionate a mano nella nostra cantina e poi delicatamente diraspate e pigiate per l’ulteriore fermentazione, che si è svolta in barriques da 225l a coperchio aperto. Durante l’intero processo di gestione del cappello di fermentazione è stata effettuata solo mediante follatura a mano, quindi l’impatto meccanico complessivo sulle bucce dell’uva è stato ridotto al minimo e ha garantito un’estrazione morbida dei tannini e degli elementi coloranti. Dopo una macerazione di 20 giorni, il vino è stato trasferito in barriques di rovere chiuse per la fermentazione malolattica e l’affinamento per 12 mesi. La filtrazione grossolana è stata completata dall’imbottigliamento e da 6 mesi di affinamento in bottiglia nella nostra cantina prima dell’uscita.

Aromi:                                  Il vino si presenta al naso intenso, fruttato e speziato, con note di mora, ribes nero, liquirizia e fumo

Palato:                                  Al palato è perfettamente bilanciato tra ricchi sapori di frutta dolce e tannini piacevoli e morbidi
