Vinificazione

Il blocco selezionato di Rkatsiteli K.05 dei vigneti di Kondoli è stato vendemmiato verde durante i primi giorni di agosto per ridurre artificialmente la resa di uva fino a 7 tonnellate per ettaro e quindi, aumentare la qualità complessiva e la concentrazione di frutta rimanente. A fine settembre le uve sono state raccolte a mano in piccole cassette, selezionate a mano nella nostra cantina e sottoposte alla pressatura a grappolo pieno nella pressa pneumatica. La fermentazione è stata effettuata con lieviti indigeni, per il 35% in barriques nuove di rovere francese, per il 35% in barriques vecchie e per il 30% in serbatoi di acciaio inox per conservarne la freschezza. L’agitazione manuale è stata applicata per 9 mesi di affinamento in barrique per l’integrazione di aromi e profumi. La miscelazione è stata effettuata dopo 12 mesi di affinamento. La filtrazione e l’imbottigliamento minimo hanno completato il processo.

Colore:                                 Colore dorato brillante

Aromi:                                 Profumo fragrante e fruttato che comprende pesca e albicocca, con note di fumo, legno e crème brûlée di sottofondo

Palato:                                 Il palato si apre con una raffinata trama fruttata, riecheggiando la promessa del naso.
Pieno e sapido, si distingue in un lungo finale burroso e fresco.
