Vinificazione

Il blocco BIO del vigneto Kudigora è gestito nel pieno rispetto dei principi e dei concetti della coltivazione biologica dell’uva. Le uve completamente mature vengono raccolte a mano alla fine di settembre. La diraspatura e pigiatura soffice è seguita da una fermentazione a temperatura controllata (23-28°C) su lieviti indigeni presenti sulla buccia dell’uva. Dopo 5-7 giorni di macerazione, quando di solito si raggiunge il livello desiderato di zuccheri residui, la fermentazione viene interrotta per raffreddamento, al fine di mantenere la naturale dolcezza e freschezza del vino. Successivamente il vino viene mantenuto freddo a circa 0°C prima dell’imbottigliamento.

Aromi:                                 Marmellata di more schiacciate e lamponi selvatici

Palato:                                 Espressivo e fruttato, dolce e maturo di mora e confettura di lampone sono prevalenti al palato iniziale. Offre un fantastico equilibrio di naturale dolcezza, leggera acidità e piacevole acidità.
